Zucchini

I have got these coming out of my ears!So....I have made zucchini cake x2, zucchini bread, sauted zucchini, a zucchini casserole, have frozen 7 bags of grated zucchini and have given several away (and have had one stolen...right Laurie).
Chocolate Zucchini Cake....It tasted alot better than it looked!
Now onto these suckers.....I think we may have stuffed peppers for supper.

Oh, I LOVE chocolate zucchini cake. My mom has a really great recipe. Yours looks delish! I remember when my mom had these suckers coming out the 'whazoo' (as she used to say). You're very creative with your cooking - that's for sure!

I'd love a really good stuffed pepper recipe!!

I make stuffed peppers the lazy way and my husband loves them. I us canned corn beef hash to stuff them and pour a little tomato sauce over them and bake. I don't like rice so this is an easy recipe and one that I like too.

We have tons of zucchini too. Elijah planted the garden and I forgot to tell him I only plant two hills of zucchini. He planted the whole package!

Dice them. Place single layer on pan. Freeze them. Bag them and enjoy them all winter long.

What a wonderful time of year. All the fruit and vegetables you can just pluck out of the garden. Enjoy them now and can them or freeze them for wonderful meals in the winter when the snow is on the ground.

Love and Hugs,
Joyce
