Christmas Baking

I am looking for some good Christmas cookie or candy recipes. I AM going to find the time to make some this year but I am in need of some good recipes. Anybody have any that you are willing to share?

Peanut Butter Cup Cookies

1 package peanut butter cookie mix
1 bag reese’s peanut butter cups
M&Ms

Line a mini muffin pan with mini muffin wrappers. Prepare dough according to the cookie mix. Roll cookie dough into small balls and place in each individual wrapper. Bake as directed on package. Remove from oven and place 1 peanut butter cup in each cookie while still in muffin pan. As chocolate melts on top add the mini m&ms. Let cool in the pan. I use a toothpick to help pull each cookie out. They are even better when frozen.

my family's all time favorite...we just made last night:

Oreo truffles (and i by the way hate oreos usually...but this is the BEST)
1 lb. of oreo's (bag)
1 8oz. cream cheese
8 squares white almond bark
1 square chocolate

crush oreos in food processor until fine. mix in softened cream cheese in mixer. cool for at least 1/2 hour. roll into balls. let balls chill for 20+ minutes. heat almond bark (carefully:0), roll balls in bark and sit on waxing paper. heat chocolate and dip fork into it and drizzle tops with chocolate.

DELICIOUS. these are a hit everywhere!

I was going to suggest you make peanut butter balls, but they would be so similar to the cookies Sarah left.

It's our tradition for my mom, son, and I to make truck loads of the balls to give as gifts. We eat our share too. I really don't know the exact recipe. Mom always does the mixing and I help with the rolling and dipping. I'll try to get her to put it to paper then I'll send it your way!

I've made the oreo truffles heidi mentioned, but used semisweet chocolate to dip them in! They are so good and easy, only problem they need to stay in the frig.

I love making Snowball cookies and found a new cookie recipe in Rachel Ray's magazine! I sometimes make peanut patties, hubby's favorite!

I too am hoping to get some baking done this year!!

We like to make fudge. MMN Good.

These are two of the kids favorites and we enjoy making them together..
Dipping pretzels in almond bark.
Spreading Peanut Butter between ritz crackers and dipping them in almond bark.

I like getting a few new ideas too.

Here's my recipe for Whipped Shortbread - it's really easy!

Whipped Shortbread
(from The Best of the Best of Bridge book)

1 cup butter (no substitutes)
1/2 cup icing sugar
1 1/2 cups flour

Cream butter and sugar with mixmaster. Add flour and beat for 10 minutes (this is the secret to the melt in your mouth part). Drop from small spoon onto cookie sheet. Decorate with maraschino cherry pieces, if you like. Bake at 325 degrees F for about 10 minutes, just until bottoms are lightly browned. Makes about 3 dozen small cookies. Can easily be doubled and extras freeze nicely.
